Banana and Orange French Toast

Healthier version of french toast which is loved by everyone

Ingredients
  

  • 1 ripe banana
  • 2 medium eggs
  • ½ tsp cinnamon powder (substitute: ¼ tsp cardamom powder)
  • 1 orange
  • 4-5 slices whole grain bread
  • 3 Tbsp butter (for frying)
  • some fresh berries and honey for serving (optional)

Instructions
 

  • Wash the orange and completely dry it. Use a grater to get the zest of half of the orange. Then cut it in half. Squeeze it through a sieve to get the juice of half of the orange. Slice and reserve the other half for garnishing later.
  • Take a bowl (preferably rectangular), big enough to fit the bread slices. Peel and add the banana, eggs, cinnamon powder, the orange juice and orange zest (from step 1). Use a stab mixer to make a smooth paste. (you can also use a blender).
  • Put a pan on medium heat and add some butter. Let it heat up.
  • Soak a bread slice into the prepared mixture then transfer it carefully into the heated pan. Once placed, do not move. Let it cook on medium heat for 3-4 minutes until it develops a brown crust. Flip and cook on the other side also for 3-4 minutes or until browned.
  • Transfer to a serving plate and top with fresh berries. If you like it sweeter, drizzle some honey on top.

Notes

  • Use a ripe banana to get the right amount of sweetness.
  • You can skip the orange if you do not have it on hand or if your kid do not like it.
  • I used whole wheat bread but you can use any other kind of your choice.
  • You can substitute cinnamon powder with cardamom powder.
