Boondi Raita

A perfect companion to biryani and pulao, this raita shouldn't be missed on any occasion.

Ingredients
  

  • ½ cup boondi (I used Haldiram Boondi)
  • ½ tsp roasted ground cumin
  • ¼ tsp red chili powder (adjust to preferred spice level)
  • ½ tsp garlic powder
  • ½ tsp black salt
  • 1 ½ cup boiling water
  • 1 cup full-fat yogurt (beaten)
Foe the tadka
  • 2 tsp olive oil
  • 2 cloves garlic (thinly sliced)
  • ½ tsp cumin seeds

Method
 

  1. Add the boondi to a deep bowl, along with roasted ground cumin, red chili powder, garlic powder and black salt. Add the boiling water, mix gently and leave to soak for 2 minutes.
  2. Add the yogurt and mix to combine.
  3. For the tarka: In a skillet, heat the olive oil. Add the garlic and fry for 1 minute on medium heat. Then add the cumin seeds and fry for another minute (until garlic is golden brown). Add the tarka to the raita.
