Chop your veggies, beat the eggs, get quinoa ready. Since the cooking moves quickly, you want everything prepped ahead.
dd oil over medium heat. Once shimmering, add the shallot and garlic. Sauté until fragrant — about 1 minute (don’t let them brown too much).
Throw in cabbage, bell pepper, and carrot. Toss them for 2–3 minutes until they’re slightly softened but still vivid.
Now add your cooked quinoa. Stir well so it combines with the vegetables.
Move everything to one side of the pan. Pour beaten eggs into the empty side. Scramble them gently, letting them just set, then mix them into the quinoa.
Drizzle soy sauce, rice vinegar, and sprinkle chili flakes. Stir continuously for 1–2 minutes — everything should be nicely coated and hot.
Turn off heat. Taste and adjust salt/pepper. Top with chopped spring onions before serving.
