How to make Cauliflower Rice?

Making cauliflower rice at home is no rocket science. It only takes a few minutes and some simple steps to make your own grainy and fluffy cauli rice.

Cauliflower rice can serve as a low carb, low calorie base for curries and sauces. It’s a great substitute for rice for people who are watching their calories or following a particular diet like keto, paleo, Whole30 etc. You can pair it with your favorite curries and sauces to have a guilt free meal.

What equipment do I need to make cauliflower rice?

You can make cauliflower rice using either of the following equipments:

  • Grater: A standard grater will do the job. But it should not be the one with fine blades. Coarse blades are ideal for grating the cauliflower into the required grain size.
  • Chopper/Food processor: A chopper or food processor will do the job in minutes if not seconds.

Step by step procedure:

Step 1- Wash/Dry: Wash a head of cauliflower and thoroughly dry using several kitchen towels. The drier you get your cauliflower, the grainer and fluffier it will turn out. No one likes soggy cauliflower rice.

Step 2- Cut: Cut off the stems and seperate the florets. (Do not cut into too small pieces if you are using a grater to make your cauliflower rice).

Step 3-Grate/Chop: You can use either of the two options:

  • Option 1 – Grater : Use a grater with coarse blade to grate your cauliflower. Only grate the florets and not the hard parts. You can reserve the stem and the hard parts for making a soup later.
  • Option 2- Chopper/ Food Processor: Put into a chopper/ food processor. Give a few blitzes until you get rice-like grainy texture. Do not make it too fine as it will turn lumpy, nor leave the grains too big as they will not cook through easily.

Step 4 – Cook: Heat a pan on medium heat with a tablespoon on olive oil. Spread the oil all around and add the cauliflower. Add 1/2 teaspoon of salt, mix thoroughly. Level the cauliflower evenly. Cover and turn the heat to low. Let cook for 15 minutes without stirring. (You want to steam it and not fry it). If your cauliflower develops some brown bits at the bottom, it’s perfectly fine. It will taste a bit toasty.

How long can I store cauliflower rice in the fridge?

Stored in an airtight container, it keeps well for 3-4 days in the refrigerator.

Can I freeze cauliflower rice?

Yes, cooked cauliflower rice can be frozen. In an airtight container, it keeps good for upto 6 weeks when stored in the freezer. In fact, a big head gives you about 8 cups of cauliflower rice. In case you cannot consume it within 3-4 days, freezing is a great option to keep it fresh and to reduce your effort for the next time.
