What is makhana?
Makhana, also known as fox nuts or lotus seeds, are the popped seeds of the lotus flower. They have a light, airy texture and a mild flavour, making them incredibly versatile. Once roasted, they become wonderfully crisp and are often enjoyed as a healthier snack or added to curries and desserts.
They’re also a good source of minerals such as magnesium, phosphorus, and calcium, making them a nutritious ingredient to keep in your pantry.

- Roast the makhana in a pan on low heat with a small splash of oil until they're crisp and lightly golden. It will take aboiut 5-7 minutes. This step is essential, as it brings out their nutty flavour and gives them their signature crunch. To test if the makhana are roated enough, crush one between your fingers. If it's roasted enough, it will be crushed easily without being spongy.
- While the makhana cools slightly, whisk together the Greek yogurt with roasted cumin, black salt, chilli powder, and a little sugar until smooth and creamy.
- Add the roasted makhana, pomegrenate seeds and chopped coriander to the yogurt, reserving some for garnish later. Mix to combine everything together.
- Garnish and serve immediately while the makhana are still crunchy.
Tips for the best raita
- Roast the makhana until they’re completely crisp. If they’re under-roasted, they’ll soften too quickly in the yogurt. Test if the makhana are roated enough by crushing one between your fingers. If it’s roasted enough, it will be crushed easily without being spongy.
- Add the makhana just before serving if you prefer maximum crunch. Or wait for 10 minutes to let it absorb the flavours. Don’t let it sit for too long otherwise the makhana will become soggy.
- Greek yogurt creates a thick and creamy consistency, but regular yogurt can also be used. If using regular yogurt, strain it for 30 minutes if you prefer a thicker raita.
- Taste before serving and adjust the seasoning to suit your palate. Every yogurt has a slightly different level of tanginess.
