Butternut Squash Risotto

Risotto is to Italians what biryani is to desis. It’s comforting, its special and above all it’s decadent. There are many variations of risotto, but this is my autumn favorite.

Egg and Toast Roll-ups

These rolls could me made in several variations. Add a sausage in between, or shredded chicken. Or make them sweet by adding sugar, Nutella or marmalade. Whatever your kid might like. It is much more fun than a regular french toast.

Easy Cheesy Wings

These are the easiest, quickest chicken wings you will ever make. My kids like cheese and ketchup, so I combined these two flavors.

Creamy mushrooms with mashed potato dumplings (hack)

When eating out at a German restaurant, this is one of our favorite things to order. Creamy earthy mushrooms are complimented perfectly with soft and fluffy potato dumplings (which I have improvised here).

Mushroom Zoodles in Coconut Pesto Sauce

Zucchini noodles when combined with earthy mushrooms and creamy coconut milk, some peas and paprika, smothered into a flavorful pesto sauce, isn’t just a treat for the eyes, it makes for an irresistible meal as well. I used shiitake and oyster mushrooms here for their varying nutritional benefits.

Eggplant Parmigiana (low carb /keto friendly)

Layers of eggplants drenched into a meat sauce, before being topped with cheese and baked to have a gorgeously golden crust, this comforting Italian casserole is no wonder a favorite for many.
